However, I would also like to know a few important jobs that should definitely be done. Like the hose from the fuel pump, for example. Something about absolutely greasing....

The most critical things won't be related to mileage, they'll be related to age/passing of time.
The bike is now at least 14 years old, if it hasn't already had it it will need some TLC. Frame and suspension bearings are a good place to start, after 14 years I'd be surprised if at least some of them don't need replacing.
Other stuff is simply the usual service schedule, although a new alternator belt wouldn't go amiss at this age.

This is maybe a stupid question but when you do a n* 20k service (20k, 40k, 60k...), you do the items that are listed in the 20K AND the ones in the 10K service, right?

they are multiples so the shorter dustance service items should be repeated anyway

I'm tracking the procedure for greasing the steering head and swing arm, but wasn't tracking the wheel bearings. I assumed this only relates to the front, as the rear is encased in the bevelbox? What are the procedures?

I use a split collet puller to snare the inner race of the bearing, and then use a sliding hammer to extract the bearing. Once I have one out, I remove the weird spacer between the bearings, and simply drive the second one out from the other internal side.
BTW, Toledo do a comprehensive split collet puller set, part number 246300. Not necessary just to do wheel bearings, but very handy for other situations.

To check wheelbearings - (1) support bike and press brake pads in so the wheel spins freely, (2) rotate it gently in the normal direction arouind the axle feeling for tightness or rough patches (3) Then look for looseness - with one hand on each side of the wheel as you look at it try to shake the wheel against the normal direction of rotation; firstly rotating it left side against right side then top against bottom.
If there is no looseness, tightness or rough patches -then the bearings are fine.. If not replace them
Either extract them nicely with a puller (as above) or using a narrow drift (or screwdirver) from the opposite side against the inside edge of the race.
The numbers on the side of the race are standard numbers for replacements at any bearing factors
