Looking for something that will give my passengers a bit of piece of mind while still looking good... Think the Backrest on a Rocket 3 GT....

For two-up touring I have a Ventura rack taking a Royster bag - makes her feel more confident (even having just the rack behind her seems to help).
BtW after interrogation i also found that the pillion footrests let her feet slide off but have modded them to slope up by about 10 degrees and she is happy with that

I had a Corbin seat made with a removable back rest. Very happy with how it came out. Wasn’t cheap but looks like it belongs with the bike….

Yeah, tough to satisfy both of your criteria, but I agree with Lcjohnny, the EASILY REMOVABLE Ventura Rack is probably your best option.
